I have a 2004 Chrysler 300m with the 7 speaker infinity sound system which sounds terrible! Is this normal and is there anything I can do to make it sound better? I'm starting to think it's just crappy acoustics in the car.

Welcome to the forum.
So I’m guessing you do not have speakers in the rear doors correct?
Not sure yet if the Concord amp is plug and play for your system. It brings the rear deck alive in the 9 speaker system.
Azera Amp is the ultimate upgrade for sure.

The 360w has some well documented factory upgrades, 240w system I'm not so sure.

If it were me I'd upgrade the speakers and look into some factory amp upgrade systems offered by aftermarket companies. They allow you to keep your factory radio (if you so desire) while boosting the power and changing the audio curves.

Another thought I'd upgrade to an RB1. RB1 is thought to have the best audio tuning as a factory radio, and also gives you navigation if you install an antenna and get a nav disc.

I had the even lower-line 120W audio system in my Intrepid originally.
It wasn't amazing.
The lower-line audio systems are installed in the kickpanel of the front passenger side. You can add the length of harness that goes to the trunk to upgrade it to the 360 amp wiring, then upgrade that further with the Azera amp conversion.
You just need the wiring from a car at the junkyard, then to spend some time splicing and running wires. It was a relatively easy process, I believe the wire colors even match.

Umm that seems very hard and involved!

It depends on how you feel about splicing and running wires I guess. It wasn't a hard process at all.
Cut the wires out, cut the connector off the midline harness, attach those wires to the new harness, run the wires down the passenger side of the car, where they were run from the factory, get a factory 360 amp and plug the new harness into it.

Yeah I can't do that I have ZERO wiring experience!
